A carrot and an apple are having a chat. They both agree that too much of their nutrients are lost in the time it takes to grow and then get from farm to table. It is also due to the loss of nutrients from modern farming practices and this results in a lower vitamin value of the product. Humans and farmers have been favouring profit, speed and volume over micronutrients and vitamins. This practice ultimately sacrifices the health of humans and the soil.
This Fable was inspired by Brigitte Zeitlin. She is a certified dietician from Loyal University, in Chicago, USA. While working at the Mount Sinai Medical Centre, she has studied nutritional solutions for gastrointestinal disorders, diabetes, heart disease and weight management.
